Easy Air Fryer Teriyaki Chicken with Quinoa and Cucumber

When short on time, this is one of my go to meals to make in the air fryer! It also is high in protein, which makes ideal for students who need a meal to keep them full for the school day. Quinoa is a grain, which makes it a carbohydrate. However, it is also high in protein. I like my chicken on the more lean side, so I used chicken breast. Chicken thighs also work. Cucumbers are optional, but they were a quick and easy way to get some vegetables in. This meal is ideal for any young person with a tight schedule, who is looking for something quick and healthy. Ingredients:
1-1.5lb chicken breast (cut into 1in cubes)
Pinch of salt
1 cup of teriyaki sauce
1 1/2 cup of quinoa
1/2 of a English cucumber
Recipe (Yields 4):
Quinoa
Preheat air fryer to 360°F.
Start by bringing 2 cups of water to a boil in a pot. Mix in a pinch of salt
Once the water has reached boiling, add your quinoa in. Cover the pot with a lid and reduce heat to low/simmer for 15 minutes.
While quinoa is cooking, prep your chicken by cutting it.
After 15 minutes, turn off the heat for your quinoa and let it sit for 5 minutes. Then drain the quinoa through a strainer in the sink. Add the quinoa back to the pot and let sit for another 5 minutes. Fluff with a fork.
Chicken
Meanwhile, pour teriyaki sauce into a large bowl. Dump chicken into bowl and mix until all pieces are covered in sauce. Let sit for 10 minutes to let chicken marinate.
Then pour the chicken into the air fryer basket, making sure pieces are spread out evenly with no overlap. Cook for 12 minutes at. 360°F, flipping the chicken after 6 minutes of cooking to ensure even cooking.
While the chicken cools down, use a mandolin or a knife to thinly slice cucumbers (I used 1/2 a cucumber, but use as much as you would like)
Add quinoa and chicken to a bowl. Pour any leftover teriyaki sauce over the chicken for extra flavor. Garnish with cucumbers to your liking.
